Bubble Up Enchilada's

I normally am not a blogger who posts recipes...because I rarely cook.  My meals usually consist of Lean Cuisines or the like.  Seriously.

However, I found a recipe for Bubble Up Enchilada's on Pinterest last week and HAD to try it.

I only usually try recipes that have the least amount of ingredients.  Sine I'm not a cook, I don't have on hand all the spices and shizz that most recipes call for.

This one was easy and SOOOOOO good.  Mandy can testify to that as well.  Oh, did I mention is low cal/fat too?

Ingredients:
1lb of ground turkey
1 can of enchilada sauce
1 can of tomato sauce
1 can of black beans
1 can of reduced fat biscuits (cut into quarters)
1 package of Mexican Cheese

Brown ground turkey
Mix in the enchilada sauce, tomato sauce, black beans, and biscuits.
Put all into a 9 x 13 casserole dish
Bake on 350 for 25 minutes
After 25 minutes, add cheese to top and bake for another 10 minutes.

SOOOOO GOOD.  And if you make this I want you to tell me how good it was. 

The next time I try this recipe, I might use MORE cheese.  You can never have enough cheese.

Looks yummy and I want a bite. I don't know how I feel about the biscuits though. What was the texture like after it was baked?

Wait, you mix the biscuits in with the rest of the slop? So, is it more like a casserole?

It looks good, but I'm easily confused.

This seriously looks amazing!!! Mouth watering amazing!!!!! I happen to have ground turkey frozen in my freezer and tomato sauce and black beans in my pantry. Looks like all I need are a few more ingredients and I will be the gourmet chef of a wife that Bryan has always wanted ;)

Oh, and next time you come up, we're seriously crocking. Is that even a word, "crocking"? Anyway, you get my drift - lets do make it happen!

yummy yummy! i must try. this looks easy and that is my style in the kitchen. this gal wasn't made to slave over a hot stove. i am sooo NOT my mother ha.

True story. I basically always double the amount of cheese in any recipe that I make, haha.
